Flay and Laurence Kretchmer opened Bolo Bar & Restaurant in the Flatiron District, just a few blocks away from Mesa Grill, in November 1993. He decided to expand his business by opening Mesa Grill at Caesars Palace in Las Vegas in 2004, and Bar Americain, an American Brasserie, in Midtown Manhattan in 2005.
He continued to grow his restaurant empire by building Bobby Flay Steak in Atlantic City, New Jersey, at the Borgata Hotel Casino & Spa. This was followed by the opening of a third Mesa Grill in the Bahamas on March 28, 2007, at The Cove at Atlantis Paradise Island.
